low sugar butter sponge cake with sugar free frosting

                          This little sponge cake turned out lovely, I made it for mothers day,
                                       but it would be a delight at any tea party, delicious!


INGREDIENTS:

200g butter
4 tbls caster sugar(aprox 35g)
1 tsp liquid stevia
2 tbls natural yoghurt
300g self raising flour, sieved
4 eggs, beaten
2 - 4 tbls hot water


Method:

Preheat the oven at 190oC /375oF/No5

Cream the butter, sugar, natural yoghurt and liquid stevia together.

Add the eggs and flour alternately.

Add enough hot water to from soft dropping consistency and place in two 7" buttered tins.

Bake in the centre of the oven until the top is golden brown.

The sponge wont rise quite as high as when baking completely with sugar.

When cool sandwich together with sugar free jam and spread cream cheese frosting over the top, recipe below.

I decorated with fresh strawberries but you can use whatever you like.

      Think I better grab a piece before it disappears!
