Healthy stevia sweet and sour sauce

                                   Healthy stevia sweet and sour sauce


Who needs sugar laden  takeaways  when you can have a much healthier version, without all that added sugar! This recipe uses liquid stevia instead of sugar, which is great for people wanting to cut down on sugar, whether it's for weight loss reasons or medical reasons.

                                                                  
INGREDIENTS:

1 tsp olive
1 small red onion
2 garlic cloves (crushed)
1/2 tsp grated ginger root
1/2 red chilli, finely chopped or pinch of chilli flakes
4 tbls of tomato puree
200ml pineapple juice
200g pineapple chunks
2 tbls rice vinegear
15 - 20 drops of sweet solutions liquid stevia or to taste
2 tbls soy sauce
2 tsp cornflour
ground black pepper and a pinch of sea salt


METHOD:

1: heat the oil in a pan and add the onions till they start to soften. Add the garlic, ginger and chilli and cook for a minute.

2: In a small bowl mix the cornflour with 3tbls of the pineapple juice and mix to make a paste.

3: Add the rest of the pineapple juice, vinegar, soy sauce, stevia and tomato puree to the pan and bring to the boil. Turn the the heat down and add the pineapple chunks and cornflour mix, let it simmer for a couple of minutes till the sauce thickens. Season to taste.

4: This sauce can be used over meat, in stir fry's and as a dipping sauce, it's up to you!


I was able to store the sauce in the fridge for about five days, it can also be frozen for up to three months.

low sugar butter sponge cake with sugar free frosting

                          This little sponge cake turned out lovely, I made it for mothers day,
                                       but it would be a delight at any tea party, delicious!


INGREDIENTS:

200g butter
4 tbls caster sugar(aprox 35g)
1 tsp liquid stevia
2 tbls natural yoghurt
300g self raising flour, sieved
4 eggs, beaten
2 - 4 tbls hot water


Method:

Preheat the oven at 190oC /375oF/No5

Cream the butter, sugar, natural yoghurt and liquid stevia together.

Add the eggs and flour alternately.

Add enough hot water to from soft dropping consistency and place in two 7" buttered tins.

Bake in the centre of the oven until the top is golden brown.

The sponge wont rise quite as high as when baking completely with sugar.

When cool sandwich together with sugar free jam and spread cream cheese frosting over the top, recipe below.

I decorated with fresh strawberries but you can use whatever you like.

      Think I better grab a piece before it disappears!

liquid stevia satay sauce

                                   This is one off my favourite Chinese style sauce recipes,
                                    it's easy to prepare, sugar free and very tasty! 
                                     
                             I had mine with chicken and a fresh salad(cutting down on carbs)
                             but it can be used as a stir fry sauce or paired with some fluffy rice.


 INGREDIENTS:

 1/2 tbls peanut oil.
 1 clove garlic (crushed
 1 small onion (finely chopped)
 1 small red chilli(finely chopped
 1 tsp dried chilli flakes
 10 - 15 drops off liquid stevia
 1 tsp soy sauce
 2 tbls crunchy peanut butter
 1 can off coconut milk

Heat the oil in a frying pan and fry the garlic, onion, chilli and flakes 
over a moderate heat until soft.
Add the soy sauce, peanut butter and liquid stevia, stir through.
Add a little coconut milk gradually until you achieve your desired consistency.
This sauce tastes best served immediately but also refrigerates and re-heats very well.

                                                         My head is on the clouds



               Have you heard off the latest low carb craze to hit the UK! It's called cloud bread.

It was while I was watching an episode off this morning that they introduced this new carb free bread to their viewers. A bread with no flour involved, is it to good to be true! So I set about looking for this cloud bread and as it turns out, it's not so new at all, there is loads off blogs featuring the recipe and it's so simple to make. I just had to give it a go and see what all the fuss is about.

I'm hooked!


I now use it everyday to make sandwiches and toasties, which I have missed so much since cutting back on carbs.

                                      So here is the recipe, why not give it a try for yourself!


                    All you need is 3 eggs separated(make sure no yolk goes into the whites)

                    3 tablespoons of softened cream cheese/natural yoghurt/cottage cheese(I used cream                             cheese)
             
                    1/4 teaspoon of cream of tartar

                    3 - 4 drop off stevia liquid( you can use sugar but sugar contains carbs, whereas
                    stevia doesn't.

                    Preheat the oven to 150/300

                    In a small bowl mix the egg yolks with the cream cheese and stevia liquid.

                    In another bowl mix the egg whites and cream of tartar, whisk on high speed with an                           electric whisk until soft peaks are formed.

                    Fold the cream cheese mixture into the egg whites, just enough to mix it, trying to                                 keep the fluffiness.

                    spoon the mixture on to an oven tray covered with grease proof paper.

                    Each one should be roughly 5 inch across and 3/4 inch thick.

                    Bake until golden and a little crisp, leave to cool or eat hot.

        Keep in an airtight container, probably best in the fridge. I also like to toast mine, but be careful         they toast very easily. Enjoy!

I was searching for a diet suitable for my dads diabetes diagnosis, and I had heard so much negative information about artificial sweeteners. I then started my search for a sugar alternative that was safer, if such a thing even existed!

I came across this stuff called stevia. So I started my research. They said it was natural and safe for diabetics. it's also been used commercially in south America and Asia for years without any ill effects.

This is it! I thought, let me try this stevia stuff.

Dam it! I couldn't get it here in the UK, my only way off sourcing this stuff was from the US and it would cost a small fortune to get it posted to me.

I decided it had to to be worth a shot. My dad had a terrible sweet tooth and used all these artificial chemicals to sweeten his food and drinks, I knew it was no good for him!

We received our little bottle off stevia liquid and started to use it everyday.

So when stevia extract was approved in the UK in 2011, I started to make my own liquid. Surely it would be cheaper and more readily available to anyone who wished to try it.

It was tested at Glasgow Caledonian University and passed with flying colours!

So here you have it, a stevia liquid extract that is produced in the UK and made using only pure stevia reb A and purified Scottish water, nothing else in there.
