My head is on the clouds
Have you heard off the latest low carb craze to hit the UK! It's called cloud bread.
It was while I was watching an episode off this morning that they introduced this new carb free bread to their viewers. A bread with no flour involved, is it to good to be true! So I set about looking for this cloud bread and as it turns out, it's not so new at all, there is loads off blogs featuring the recipe and it's so simple to make. I just had to give it a go and see what all the fuss is about.
I'm hooked!
I now use it everyday to make sandwiches and toasties, which I have missed so much since cutting back on carbs.
So here is the recipe, why not give it a try for yourself!
All you need is 3 eggs separated(make sure no yolk goes into the whites)
3 tablespoons of softened cream cheese/natural yoghurt/cottage cheese(I used cream cheese)
1/4 teaspoon of cream of tartar
3 - 4 drop off stevia liquid( you can use sugar but sugar contains carbs, whereas
stevia doesn't.
Preheat the oven to 150/300
In a small bowl mix the egg yolks with the cream cheese and stevia liquid.
In another bowl mix the egg whites and cream of tartar, whisk on high speed with an electric whisk until soft peaks are formed.
Fold the cream cheese mixture into the egg whites, just enough to mix it, trying to keep the fluffiness.
spoon the mixture on to an oven tray covered with grease proof paper.
Each one should be roughly 5 inch across and 3/4 inch thick.
Bake until golden and a little crisp, leave to cool or eat hot.
Keep in an airtight container, probably best in the fridge. I also like to toast mine, but be careful they toast very easily. Enjoy!
