Healthy stevia sweet and sour sauce
Who needs sugar laden takeaways when you can have a much healthier version,
without all that added sugar! This recipe uses liquid stevia instead of sugar,
which is great for people wanting to cut down on sugar, whether it's for weight
loss reasons or medical reasons.
INGREDIENTS:
1 tsp olive
1 small red onion
2 garlic cloves (crushed)
1/2 tsp grated ginger root
1/2 red chilli, finely chopped or pinch of chilli flakes
4 tbls of tomato puree
200ml pineapple
juice
200g
pineapple chunks
2 tbls
rice vinegear
15 - 20
drops of sweet solutions liquid stevia or to taste
2 tbls soy sauce
2 tsp cornflour
ground black pepper and a pinch of sea salt

METHOD:
1: heat the oil in a pan and add the
onions till they start to soften. Add the garlic, ginger and chilli and cook
for a minute.
2: In a small bowl mix the cornflour
with 3tbls of the pineapple juice and mix to make a paste.
3: Add the rest of the pineapple juice,
vinegar, soy sauce, stevia and tomato puree to the pan and bring to the boil.
Turn the the heat down and add the pineapple chunks and cornflour mix, let it
simmer for a couple of minutes till the sauce thickens. Season to taste.
4: This sauce can be used over meat, in
stir fry's and as a dipping sauce, it's up to you!
I was able to store the sauce in the
fridge for about five days, it can also be frozen for up to three months.
